1. Manager walks the kitchen with the phone/tablet and physically ticks every closing check (takes ~3 min). 2. Quickly scans the day’s temperature graph — anything above 8 °C or below 63 °C gets a corrective-action note immediately. 3. Adds one sentence summary: “Busy Saturday, all good” or “Fridge 2 seal replaced at 4 pm”.

That single habit catches 99 % of problems before they become EHO problems. The inspector sees a perfect, signed-off record every single day for the last six months. They usually finish the visit in under 20 minutes.
