How to Make Sure Your Relief Manager Doesn’t Ruin Your Rating

Relief managers and weekend staff are the number-one reason good cafés suddenly drop stars.

They mean well, but they don’t live the system every day. They forget to check the hot holding at 2 pm, they write “OK” when the fridge is 8.9 °C, they miss the closing checks because they’re desperate to get out at 5 pm.
